Saturday morning: Corned Beef Hash

One of my favorite blogs is 80 Breakfasts where Chichajo (a friend of my youngest sister) makes delicious food accompanied by fantastic photos and humorous text. You can really see that she loves food and has fun with her blog. Well, this morning I was inspired to make one of my all-time diner breakfast favourites - Corned beef hash - and it turned out better than I thought. Here's to another breakfast idea for 80 Breakfasts.

Corned beef hash
(Serves 2)
  • Peel a large potato and dice into small cubes. Boil for 5 minutes then drain and allow to dry or wipe with a paper towel.
  • Slice a medium sized onion.
  • Take a can of good-quality corned beef and slice into small pieces.
  • Heat some oil in a non-stick pan and add the potatoes and onions. Brown on high heat.
  • Turn down the heat and then add the corned beef.
  • In another pan, heat some oil and fry 2 eggs.
  • Place the corned beef hash on a plate and top with a fried egg.

Hi! I do love corned beef hash myself. I am lucky enough to be able to buy the real corned beef here in Jersey (it's the one where you boil the meat for hours - handy if you have a pressure cooker though!).

If only someone would make me this for breakfast tomorrow...! :)

Wow just woke up amd this is the first thing I saw....looks so yummy. Ill make that soon for breakfast. Can you find good quality corned beef in Spain?

This looks so so delicious. But sadly A and I have embarked on a v low carb (ie no carb) thing, so I'll have to do this without the potatoes. Yum, yum.

Well, we can get good quality canned corned beef (lots of Brits live here so the supermarkets stock it) but not the real thing. It took about 15 minutes to make and it was worth it!

Why are you on a diet?!!! (you don;t need it) Anyway, it's just as good without the potatoes but have it with two eggs.

Aw! Thanks for such a nice mention :) This sounds fantastic! I love corned beef and have recently discovered a locally made one that is quite good! Plus I have some neglected potatoes lolling around my pantry...Hmmm :) Perfect timing!

Yes, both El Corte Ingles (Hipercor) and SuperSol have canned corned beef. Sometimes, i get a can at the English Butcher in Benavista as well.
